Lunches can be boring.
Its hard to think of something the night before that you’ll be looking forward to eat the next day! This quinoa salad is easy to make and much tastier than a shop bought sandwich or salad. It’s healthy, filling and can be eaten hot or cold! I usually make a batch and then it can be taken for a few days.
Here is what you will need for one to two portions …
1 x Courgette
1 x Leek
1 x Pepper (Colour of your choice)
1/2 Broccoli
2 Cloves of Garlic
1 tsp of Vegetable Stock
1 Cup of quinoa
Olive Oil
Chilli Flakes
Thyme
Oregano
Salt and Pepper
Method…
Chop up all your veg into bitesize pieces and place in a dish. Drizzle with Olive Oil and sprinkle on your herbs, chilli flakes, salt and pepper. Crush the two garlic cloves and mix together. Place in the oven at 175° for 15 -20 minutes (make sure to give the tray a shake half way through)
Whilst your veg are cooking away get the quinoa on the go! In a small pan add one cup of quinoa and two cups of boiling water with 1 tsp of stock. Give it a stir and bring to the boil, allow to simmer away. It will take around 10 minutes to cook.
The quinoa will absorb the water so keep an eye to make sure it doesn’t start sticking to the pan. Give it a stir now and then. Once the water has been absorbed take of the heat and allow to stand for a couple of minutes and then fluff up with a fork.
When both the quinoa and veg are cooked mix together and you’re done!
Shredded chicken is a good addition as is feta!
